This is another “nod to the Irish” recipe,
roasted cauliflower with beer cheese sauce~
This is so good, it will have you dancing an Irish jig ☘️
This recipe is so easy to prepare you don’t need a special occasion
Cut the cauliflower into thick slices, or “steaks”
Some small pieces will crumble off,
but just toss them on the pan too
Make sure you spray your foil lined pan with cooking oil spray
before adding the cauliflower or use parchment paper
Drizzle the cauliflower liberally with olive oil
and sprinkle with smoked paprika, salt and pepper
Roast at 425 for 20 minutes, turn cauliflower over
and continue to bake for another 20 minutes
or until cauliflower is soft and starting to char on the edges
About 15 minutes before cauliflower is done,
make the cheese sauce
Stir flour into melted butter to form the roux,
then add the milk, beer and mustard
Cook and stir until thickened
Add cheese and stir until smooth
The specks are from the grainy mustard
which gives this sauce a great flavor and tang
Serve in individual shallow bowls to keep the sauce contained
