5 Minute Ice Box Cookie Cake
Ingredients
- 1 pint heavy whipping cream
- 2 tsp almond extract
- 1/4 cup powdered sugar
- 20 chocolate filled shortbread cookies like Pepperidge Farm Milanos
- caramel sauce
Instructions
- Whip cream with sugar and almond extract until stiff peaks form.
- Use a 8″ round or square deep dish.
- Put a layer of 8-9 cookies in the bottom. Spread with half of the whipped cream.
- Top with a drizzle of caramel and repeat layers, reserving one cookie for crumb topping.
- Refrigerate for at least 4 hours to soften cookies before serving.
