ROASTED VEGETABLES FOR PRIMAVERA

Ingredients
  

  • grape tomatoes washed
  • zucchini washed and sliced into rounds and halved
  • yellow squash washed and sliced into rounds and halved
  • asparagus washed and stalks trimmed

Instructions
 

  • Spray a foil lined pan with cooking spray.
  • Arrange vegetables in an even layer and drizzle with Olive Oil and season.
  • Bake in a 400 degree oven for 20-30 minutes, until vegetables are starting to brown and look done.
  • It is hard to pin point cooking time here because it all depends on the size of your vegetables,  just keep an eye on them after about 20 minutes.
