Wash potatoes and cut into 1/4s creating small wedges of equal size. If potatoes are large, you might have to cut them into more pieces
Remove rosemary leaves from stems and chop
place potatoes in a large mixing bowl and drizzle with just enough olive oil to coat. Season with salt and pepper and rosemary, tossing to distribute seasonings.
Place potatoes in an even layer on your fryer rack or in your fryer basket
Cook at 400 degrees for 16-20 minutes or until golden

*you can also bake these potatoes on a sheet pan in the oven at 400 degrees for 40-45 minutes
