small onion

olive oil

medium apples
peeled and chopped

medium potato
peeled and chopped

low-sodium chicken broth
1 1/2
cups
unsweetened apple juice
Kosher salt and freshly ground pepper
2
cups
shredded extra-sharp cheddar cheese
divided
Melt butter with olive oil in a skillet over medium high heat
crispy bacon bits for garnish
Instructions
Add the onion, apples and potato and cook, stirring frequently, until the apples are soft, about 8 minutes.
Add the chicken broth, apple juice, salt,and pepper to taste. Bring to a simmer and cook until the potato is soft, 10 to 12 minutes.
Puree soup with an immersion blender*
Stir in 1 1/2 cups of cheese, reserving the rest for garnish
When cheese is melted and soup is heated through, ladle into bowls and garnish with reserved cheese and bacon bits
Notes
*Or puree in a blender, but remember that hot soup will overflow if you put to much into the blender, so do this in batches
