Instructions
Cook bacon partially, to render some of the fat but stop cooking when it's still pliable to wrap around hot dogs
Saute onion in rendered bacon fat or in a little olive oil and butter over medium low heat for about 10 minutes, stirring occasionally. Add pineapple and continue to cook on medium low for a few more minutes. Slice hot dogs in 1/2 vertically, leaving one side attached.
Open slit in hot dog and stuffed with some of the salsa. Wrap hot dog with a slice of bacon and secure each end with a toothpick.
Place on a parchment lined baking sheet and bake for 10 minutes and check bacon for doneness. Continue to bake for 5-10 more minutes or until bacon is cooked. Time will depend on type of bacon and hot dogs used.
Toast buns. Place one hot dog in each bun and top with more salsa.
