Blueberry Corn Bake

Fresh blueberries and creamed corn are baked into a delicious side dish for breakfast, lunch or dinner!

Equipment

  • 8" x 8" deep baking dish

Ingredients
  

  • 1 cup fresh blueberries
  • 2 cans 15 oz. creamed corn
  • 1 1/2 cups cornmeal
  • 4 large eggs
  • 8 Tbsp butter
  • 1 cup milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt

Instructions
 

  • Mix dry ingredients together in a large mixing bowl
  • Melt butter and beat eggs and then stir them into the dry ingredients
  • Mix in creamed corn and blueberries
  • Refrigerate batter at this point for baking later if desired
  • Transfer batter to a greased baking dish
  • Bake at 350 degrees for 55-60 minutes
  • Cut into squares to serve
