Blueberry Corn Bake
Fresh blueberries and creamed corn are baked into a delicious side dish for breakfast, lunch or dinner!

- 1 cup fresh blueberries
- 2 cans 15 oz. creamed corn
- 1 1/2 cups cornmeal
- 4 large eggs
- 8 Tbsp butter
- 1 cup milk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
Mix dry ingredients together in a large mixing bowl
Melt butter and beat eggs and then stir them into the dry ingredients
Mix in creamed corn and blueberries
Refrigerate batter at this point for baking later if desired
Transfer batter to a greased baking dish
Bake at 350 degrees for 55-60 minutes
Cut into squares to serve
