Toss cauliflower with olive oil and salt and pepper on a cooking oil sprayed foil lined baking pan.
Roast at 400 for 20 minutes or until just golden, soft but not mushy.
Place cauliflower in a food processor or blender and pulse until finely chopped. Beat egg in a mixing bowl.
Add chopped cauliflower and 1 oz of each cheese. Stir with a fork to form dough, adding more cheese if possible while still leaving enough moisture so mixture will hold together.
Form into palm sized patties. Mixture might seem a little loose, but it will hold together on the pan. Place patties on a sil pat lined baking sheet.
Bake at 400 for 10 more minutes or until golden and starting to darken at the edges
Serve with green onions and sour cream, or top with pizza toppings and return to oven to heat through.
Notes
*be sure to use a flavorful cheese like Manchego, Smoked Gouda or Gruyere and a good Parmesan because that is where your flavor comes from
