Festive Vegetable Flatbread

Ingredients
  

  • 1 canned refrigerated pizza dough
  • 4 oz. sliced raw mushrooms {like Baby Bella}
  • 1/4-1/2 red onion sliced and chopped
  • 2 ears of corn* cooked and kernels cut off
  • 12-16 asparagus spears tough ends cut off and cut into 1 inch pieces
  • 2-3 T olive oil
  • 4-6 oz. grated white cheese like Fontina, mozzarella, Italian blend, white Cheddar
  • salt and pepper

Instructions
 

  • Preheat oven to 400 degrees
  • Unroll dough onto a parchment lined baking sheet and prick all over with a fork.
  • Bake for 5-6 minutes until firm and just starting to turn golden.
  • Remove from oven and brush with olive oil.  Season with salt and pepper.  Top with 1/2 of cheese.
  • Top evenly with vegetables and cover with remaining cheese.
  • Return to oven and bake for 7-10 more minutes until golden and cheese has melted.
