Kale Citrus Salad and Creamy Orange Dressing

Ingredients
  

  • 2 big handfuls kale leaves
  • 2 big handfuls spinach leaves
  • 1 heart of romaine
  • 3-4 green onions sliced
  • 1 large navel orange
  • 1/4 cup fresh orange juice
  • 2 T olive oil
  • 1 tsp sugar
  • 1 garlic clove * minced
  • 1 heaping Tablespoon Greek yogurt or sour cream
  • salt and pepper to taste

Instructions
 

  • Massage kale by rolling around on a cutting board and squeezing gently.
  • Chop into bite sized pieces, removing any tough stems.
  • Tear spinach and romaine into small pieces.
  • Put greens in a large salad bowl and add green onion.
  • Halve orange and squeeze 1/2 for the juice for the salad dressing. Peel the other half and cut into bite sized chunks, removing pith. Add to greens
  • Combine orange juice, olive oil, sugar, yogurt or sour cream, and garlic in a jar. Add a little salt and pepper. Shake shake shake. Taste and adjust seasoning. Serve over salad. Makes 3-4 servings

Notes

*adjust garlic to your taste, 1 garlic clove is pretty strong, so reduce or omit for less garlic taste
