Marinara Ricotta Meatball Bubble-up
Meatballs and biscuit dough are baked in a marinara ricotta sauce for an easy and delicious Italian style meal

- 1 can 8 count, large biscuits like Pillsbury Grands
- 1 cup ricotta cheese
- 1 1/2 cups marinara sauce
- 4 oz grated Parmesan cheese
- 1 tsp Italian seasoning
- 16 1" meatballs* recipe in note below
- garlic powder to taste
- 2 Tbsp butter melted
Combine the marinara sauce with the ricotta, Italian seasoning and 3 oz of Parmesan cheese
Spread in the bottom of a 8" x 8" casserole dish or deep dish pie pan that has been sprayed with cooking spray.
Place meatballs into sauce leaving spaces between them
Cut biscuits into 1/4s and put into a bowl
Combine garlic powder {as much or as little as you like} with melted butter and pour over biscuit pieces, tossing around gently to coat
Place biscuit pieces in between and around meatballs, pushing down into sauce.
Sprinkle remaining Parmesan over top of casserole
Bake at 350 degrees uncovered for 20 minutes, and check for doneness. Continue to cook 5-10 minutes until meatballs and biscuits are cooked all the way through
Makes 2 large servings, 3 medium servings or 4 small servings
Easy meatballs:
1/2 lb. ground beef
1/2 lb. breakfast sausage
1/4 cup BBQ sauce
1 tsp Montreal Steak Seasoning
1 cup extra sharp grated cheddar
Combine ingredients and form into 1 inch balls. Makes about 40. Use within 1-2 days or freeze.
