Orange Glazed Bacon Wrapped Stuffing Balls

stuffing wrapped in bacon, baked with an orange glaze~ a perfect holiday appetizer or way to use up leftover stuffing

Ingredients
  

  • partially cooked bacon strips plan on 1/2 to 3/4 strip per ball
  • moist leftover stuffing*
  • orange marmalade
  • brown sugar

Instructions
 

  • Combine equal parts orange marmalade and brown sugar and microwave on high until it just starts to melt, 30-60 seconds. Stir to combine into a glaze. I used about 1/4 cup each to make glaze for 10 balls
  • Form stuffing into bite size balls. Wrap balls in a strip of bacon, long enough to enclose balls for best results, and use a dab of glaze to glue ends together. Place balls seam side down on a silpat or parchment paper lined baking sheet. You can also secure bacon with toothpicks if necessary.
  • Bake for about 10 minutes to heat through and crisp bacon. Serve warm with plenty of napkins

Notes

*you can also make a quick stuffing with Pepperidge Farm or Stove Top Stuffing mix. Prepare stuffing according to package directions, using chicken broth for the liquid. Saute finely chopped onion and celery in a little butter until soft and combine with the stuffing mix. Add more broth until stuffing is very moist and will hold together.
