2ozManchego cheesegrated or diced into small pieces
1ozParmesan cheeseshredded
dash garlic powder
salt & pepper
1Tolive oil
Instructions
Toss ingredients together in a mixing bowl. Spoon into well greased mini muffin pans, pressing mixture down with fingers or the back of a spoon. Bake at 350 for 30 minutes and check potatoes. Continue to bake until golden and edges are crispy.
