Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

Combine all of the ingredients together in a large mixing bowl until smooth. Use a cookie scoop to drop the dough by rounded teaspoons on to the prepared baking sheet.

Top the cookies with a peanut butter cup for spooky owl eye, or chocolate chips, or whatever you like

Bake for 10-14 minutes, depending on size of the cookies, until slightly golden around the edges. Cool
