habanero or pepper jack cheesegrated or thinly sliced
bleu cheesecrumbled
flour tortillas
butterolive oil or oil
Instructions
For each quesadilla place chicken in an even layer on tortilla and sprinkle with cheeses. Control the spicy factor by the amount of cheese used. Cover with a second tortilla.
For each quesadilla, melt 1 T butter in skillet over medium heat and add equal amount of oil. Carefully place filled tortillas in pan and cook until underside is golden. Carefully flip quesadilla over, the cheese should be melted enough to hold it together, and cook the other side until golden, adding more butter/oil as needed. Cut into triangles to serve.
Repeat for as many quesadillas as you want to make.
