Sweet Tea Lemonade Cupcakes & Sweet Tea Vodka Poke Cake

You can make 2 loaf cakes or a combination of loaf and cupcakes

Ingredients
  

Cake

  • 1 box lemon cake mix
  • 3 eggs
  • 1 cup sweet tea*
  • 1/3 cup butter melted
  • 1 tsp almond extract
  • 1/2 cup Sweet Tea or Sweet Tea Vodka

Buttercream Icing

  • 1 stick unsalted butter
  • 4 cups powdered sugar
  • 3-4 T sweet tea
  • Garnish
  • 1 Meyer lemon zested, and sliced thinly

Instructions
 

  • Prepare cake mix by mixing dry mix in a bowl with 3 eggs, tea, butter and almond extract. Pour into prepared baking pan or pans. Bake at 350. Check mini cupcakes after 15 minutes. Check loaf pan and regular cupcakes at 20 minutes. Bake cakes until just done, do not over bake.
  • Poke cake: Immediately poke holes all over cake after baking and saturate with as much sweet tea or sweet tea vodka as it will take. Let sit in pan several hours to cool and absorb liquid.
  • Frost cooled cakes with buttercream and garnish with lemon zest and lemon slices
  • Servings: 48 mini cupcakes, or 24 regular cupcakes, or 2 9 x 5 loaf cakes, or 24 mini cupcakes and 1 loaf cake

Notes

*make your own sweet tea with tea bags, water and sugar to taste
NOTE: the tea flavor is very subtle, and quite delightful for anyone to enjoy. If you want a stronger tea flavor, steep your own very strong tea. You can also add lemon extract, or juice for more lemon flavor
