Just to show you that Spring is coming~
The days are longer and the skies are blue
Girls are donning spring dresses
And it’s time to BBQ!
We did head to the Gulf coast last week to escape the snow and have a little family fun over the Valentine/President’s Day weekend, and the first thing we did was crank up the BBQ grill~
Nobody wanted to spend too much time in the kitchen so we decided to keep it simple Saturday night and grill some shrimp and make some poppers, Southern style, stuffed with macaroni and cheese, don’t cha know…
You can’t beat good old Stouffer’s Macaroni and Cheese
We did half jalapenos and half mini sweet peppers
a heaping spoonful of cooked mac and cheese
Stretch your bacon gently before cutting so you can use less per pepper and go further around. We cut each strip into 3rds. HHjr used kebab skewers because we didn’t have any toothpicks and it worked out quite brilliantly! The skewered poppers kept each other from rolling around
I don’t think I have to tell you that these were “eye rolling” good~
We were all saying,” Yep, this is a keeper!”

Of course you can cook these in the oven too~ use a foil lined baking sheet and a cooking rack and roast at 400, until peppers are soft and bacon is crisp, about 20 minutes or so
Paired with grilled shrimp this meal felt like a summer dinner!

Here’s the recipe:
DIXIE MAC & CHEESE POPPERS
Ingredients
- 8 jalapenos
- 8 mini sweet peppers assorted colors
- 2 large boxes 20 ounce, 2.5 servings each, Stouffer’s Macaroni and Cheese [you will have some left over]
- 10-12 slices bacon
- toothpicks or skewers
Instructions
- Prepare macaroni and cheese according to package directions.
- Wash, core and seed jalapenos and peppers, cutting off the stem ends and cutting them in half. Be careful with the jalapenos, wear gloves if you are sensitive.
- Stretch bacon strips gently and cut into thirds. Place a heaping spoonful of mac and cheese in each pepper half. Wrap with a third of a strip of bacon and secure bacon with tooth pick or on a skewer.
- Grill until bacon is done and peppers are soft, or place on a baking sheet and cook at 400 until bacon is done and peppers are soft, 20-25 minutes. Makes 32
