Party Panache, Snow Capped White Russian Cookie Parfaits

To celebrate the Olympic winter games wind down, I made some Snow Capped White Russian Cookie Parfaits

This dessert looks all fancy schmancy but shhhhhhhhh, it only takes mere minutes to make

I bought this little pack of White Russian cocktails when the Olympics began thinking they would be fun to sip on during the games and decided to try one in a dessert with Tate’s*  chocolate chip cookies and whipped cream.  You don’t have to use liqueur though, you can use vanilla extract or any flavor that suits you

Tate’s* cookies taste homemade, and they are thin and crispy.  This type of cookie holds up well in this ice box parfait.

I used individual dessert cups from Libby, they are a great for a non guilty serving size and an easy way to serve dessert for a party, not to mention grabbing out of the fridge!  For another fun dessert in these dishes, Sand Dollar Dessert, click here

Crumble one cookie in the bottom of each dish and top with a few generous dollops of whipped cream and spread into an even layer with the back of a spoon

Top with additional cookie crumbles, a dollop of “snow” and a few white chocolate chips

Grate some dark chocolate with a zester and sprinkle it on top

Party ready!

These can be adapted for any occasion, tinting the whipped cream green and adding Baileys Irish Cream instead of the Kahula and these little parfaits are ready for St. Patrick’s Day

Mint chocolate chip cookie parfaits!

I used Andes chopped mint baking chips.  It was convenient, but not as pretty if you chopped them yourself~ you know, kinda like cheese, freshly grated is always better~

Don’t forget the mint!

Use any flavor you want for the whipped cream and any variety of cookie, endless possibilities!

SNOW CAPPED WHITE RUSSIAN COOKIE PARFAITS

  • small dishes

Ingredients

  • thin Chocolate Chip Cookies like Tate's
  • 1 cup heavy cream
  • 4 T Kahlua White Russian pre-mixed cocktail or any liqueur like Kahlua, Amaretto or Baileys or use 1 T vanilla, rum or almond extract
  • 2/3 cup sugar
  • chocolate for garnish [white chocolate chips and shaved dark chocolate]
  • Beat cream with liqueur and sugar until stiff peaks form

Instructions

  • Beat cream with liqueur and sugar until stiff peaks form
  • Crumble cookies and put a layer into mini dessert dishes or parfaits.
  • Add a layer of whipped cream and repeat.
  • Garnish with shaved chocolate, cookie crumbs or chocolate chips. Makes 8 mini parfaits or 4 larger parfaits
  • BAILEY’S MINT CHOCOLATE CHIP COOKIE PARFAITS
  • Substitute Bailey’s Irish Cream for the White Russian cocktail and tint whipped cream green. Top with chocolate mint chips
