This easy peasy recipe would make a great little gift for your hostess, a healthy treat , and something they could add to the buffet or tuck in their fridge and enjoy later

This is so quick to make, you will have plenty of time to decorate the jar!
Slice the onions and cucumbers and toss them in a bowl and season
Bring vinegar and sugar to a boil then ice it down quickly with a handful of cubes
Put vegetables in a quart jar and pour in the vinegar mix
I like to use “English” cucumbers, the long skinny ones that are wrapped in plastic. This helps them retain moisture without being waxed, and the skin is much softer so you don’t have to peel them. The seeds are much smaller too, and they are often referred to as seedless.
I have seen them called European cucumbers and Japanese cucumbers. They are also much easier to digest
You can serve this Cool Cucumber Salad like a relish, on a sandwich or a burger, on a bed of greens
or tossed into a large green salad
This salad would be great for a picnic take along or your next backyard BBQ too!

Cool Cucumber Salad
Equipment
- 1 quart jar
Ingredients
- 1 English or European Cucumber
- 1/2 small red onion
- 1 cup white vinegar
- 1 tsp kosher salt
- 1/4 tsp pepper
- 1/2 cup sugar
Instructions
- Wash cucumber and cut into thin slices.
- Slice onion and cut slices into 1/4s.
- Place onion and cucumber into a bowl with salt and pepper. Toss with your fingers to distribute seasoning.
- Heat vinegar and sugar in a sauce pan. Remove from heat when it starts to boil and add a handful of ice cubes.
- Place cucumbers and onions into the jar and pour vinegar mix over all.
- Cap and place in refrigerator for several hours or overnight. Keeps 1-2 weeks

Don’t forget that cupcake papers make perfect covers for jar lids! A mini paper fits perfectly, just flatten it out as much as possible. Tie on a hand lettered tag with some ribbon or twine and add a fun surprise!
Now that I think about it, radishes would be great in this salad too!!
