Take-out Tuesday, Peanut Butter & Celery Soup

This is a super quick and easy soup to warm up your chilly autumn days

If you like peanut butter on celery sticks, you are going to LOVE this soup!

My mom invented this soup for me when I broke my jaw in a horseback riding accident in college… having it  wired together for 8 weeks, meant everything was through a straw…

Since I couldn’t eat a peanut butter sandwich, she made me peanut butter soup!

It is still one of my very favorites~ you’d think I’d have bad memories, but happily, I met a dental student soon after this and fell in love…and he has been taking very good care of me ever since!!

I lightened up her original recipe by replacing peanut butter with PB2, powdered peanut butter

Stir the powder into the soup as it is simmering, and use a whisk if it gets clumpy, to smooth everything out

All the peanut butter flavor, with a significant reduction of fat and calories!

I used regular Cream of Celery soup and 2% milk, with 3 Tablespoons of PB2

234 calories per serving,  verses 350 calories, and a lot less fat-

In this recipe, the peanut butter alone adds 12 grams of fat, but if you replace it with PB2, you reduce the fat grams from 12 grams to 2 grams,  see note below*

You can lighten this up even further by using Healthy Request Cream of Celery soup, skim milk, chicken broth, or water, but I prefer milk~

PEANUT BUTTER & CELERY SOUP

Prep Time 2 minutes
Cook Time 10 minutes
Servings 2

Ingredients

  • 1 can Cream of Celery Soup
  • 1 soup can milk or 10 oz, a little over 1 cup
  • 3 T peanut butter or 3 T of PB2 powdered peanut butter

Instructions

  • Combine ingredients in a small sauce pan over medium heat. Cook and stir until smooth and hot. Makes 2 servings
