Over the holidays, we had an extra helping of chaos this year, so I made a lot of very simple dishes, like this version of “Bacon Bombs.” It is one of those recipes that I just had to try, one of those, “Oh no you didn’t !” type recipes…you know, everything about it is just sorta wrong…processed potatoes, bacon, sugar…lot’s of no nos 😱
I saw these Bacon Wrapped Tater Tot Bombs over at Damn Delicious and knew this would be so stupid easy a hit
The original recipe calls for a chunk of cheddar cheese, but I opted to make a healthy version, hahaha, and eliminated the cheese 😊
I did roll them in brown sugar, I couldn’t resist this step ^^’
I also made these the day before cooking, and refrigerated them in a covered container
Mine took 40 minutes for the bacon to cook and get crispy

Brown Sugar Bacon Bundles
Ingredients
- 36 Tater Tots thawed
- 18 slices bacon cut in half*
- 1/2 cup brown sugar
Instructions
- Wrap each Tater tot in a piece of bacon and roll in brown sugar.
- Place seam side down on a parchment paper lined baking sheet.
- Bake at 400 for 30-40 minutes, until bacon is cooked through. Serve immediately. Makes 36 bundles

Gourmet fare? Not so much. Popular? Definitely. Easy as Pie? Yep!
