This salad is a great pairing with heavy winter comfort foods, you can make the salad and a creamy orange dressing to top it, in no time at all~
You can use any salad greens you like, I used kale, spinach and romaine
Chop up the kale leaves into bite size pieces, removing any hard thick stems if necessary, and massage the kale leaves. Seriously, just sort of roll them around on your cutting board massaging them gently, they love this!

Squeeze 1/2 of a navel orange into a jar, you need 1/4 cup
Cut up the rest of the orange into bite sized chunks, removing as much pith [the white stuff] as possible
The dressing gets creamy from the addition of sour cream or plain Greek yogurt
Toss it all together
and prepare to be happy happy!
Kale Citrus Salad and Creamy Orange Dressing
Ingredients
- 2 big handfuls kale leaves
- 2 big handfuls spinach leaves
- 1 heart of romaine
- 3-4 green onions sliced
- 1 large navel orange
- 1/4 cup fresh orange juice
- 2 T olive oil
- 1 tsp sugar
- 1 garlic clove * minced
- 1 heaping Tablespoon Greek yogurt or sour cream
- salt and pepper to taste
Instructions
- Massage kale by rolling around on a cutting board and squeezing gently.
- Chop into bite sized pieces, removing any tough stems.
- Tear spinach and romaine into small pieces.
- Put greens in a large salad bowl and add green onion.
- Halve orange and squeeze 1/2 for the juice for the salad dressing. Peel the other half and cut into bite sized chunks, removing pith. Add to greens
- Combine orange juice, olive oil, sugar, yogurt or sour cream, and garlic in a jar. Add a little salt and pepper. Shake shake shake. Taste and adjust seasoning. Serve over salad. Makes 3-4 servings
