Secret Recipe Club, Speedy Peanut Butter Cookies & Spooky Owl Eyes

My Secret Recipe Club assignment this month is Mangia.  Chelsy is a young energetic Texas gal, who specializes in healthy, good for you, recipes, especially sweets!  She cooks a lot of gluten free, Paleo, vegan recipes and her blog is full of tasty temptations and witty words~ you are going to want to visit Mangia and see what she’s up to!

I can’t wait to try her P B & J Smoothie made with peanut butter powder, only 110 calories!

I also want to try Sweet and Spicy Parmesan Spoon Bread made with cornmeal and rosemary

For today’s reveal I chose her Gluten Free 3 Ingredient Peanut Butter Cookies
 
 
 

I was so excited to try this recipe, the cookies were baked, and 1 or 2 eaten,  before I realized Chelsea’s recipe came from another Secret Recipe Club member, It’s Yummy to My Tummy.  I guess 3 ingredient recipes will always draw a lot of attention!  The cookies are so good, I had to go ahead with this post… plus these cookies make for some really

Please note that the cookies with peanut butter cups are NOT gluten free
 
3 little ingredients, peanut butter, 1 egg, 1 cup sugar
 
 
 
 
 
 
If you spray your measuring cup it sure makes it easy to get the peanut butter out
 
 
 
 
 
Beat the egg right in the sprayed cup
 
 
 
 
 
Mix everything together
 
 
 
 
 
Couldn’t be easier!
 
 
 
 
 
Add chocolate chips, peanut butter cups, anything you like
 
 
 
 
 
This makes 12 large cookies, but you could make smaller cookies if preferred, just adjust cooking time
 
 
 
 
 
Mine might not win a beauty contest, but they sure tasted good!

SPEEDY PEANUT BUTTER COOKIES & SPOOKY OWL EYES

Cook Time 12 minutes

Ingredients

  • 1 cup peanut butter chunky or creamy
  • 1 egg
  • 1 cup white sugar
  • Peanut Butter cups chocolate chips, sprinkles, optional*

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine all of the ingredients together in a large mixing bowl until smooth. Use a cookie scoop to drop the dough by rounded teaspoons on to the prepared baking sheet.
  • Top the cookies with a peanut butter cup for spooky owl eye, or chocolate chips, or whatever you like
  • Bake for 10-14 minutes, depending on size of the cookies, until slightly golden around the edges. Cool
  • *some additions may contain gluten
  • Makes 12 large cookies
