My Secret Recipe Club assignment this month is Mangia. Chelsy is a young energetic Texas gal, who specializes in healthy, good for you, recipes, especially sweets! She cooks a lot of gluten free, Paleo, vegan recipes and her blog is full of tasty temptations and witty words~ you are going to want to visit Mangia and see what she’s up to!

I was so excited to try this recipe, the cookies were baked, and 1 or 2 eaten, before I realized Chelsea’s recipe came from another Secret Recipe Club member, It’s Yummy to My Tummy. I guess 3 ingredient recipes will always draw a lot of attention! The cookies are so good, I had to go ahead with this post… plus these cookies make for some really
SPEEDY PEANUT BUTTER COOKIES & SPOOKY OWL EYES
Ingredients
- 1 cup peanut butter chunky or creamy
- 1 egg
- 1 cup white sugar
- Peanut Butter cups chocolate chips, sprinkles, optional*
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine all of the ingredients together in a large mixing bowl until smooth. Use a cookie scoop to drop the dough by rounded teaspoons on to the prepared baking sheet.
- Top the cookies with a peanut butter cup for spooky owl eye, or chocolate chips, or whatever you like
- Bake for 10-14 minutes, depending on size of the cookies, until slightly golden around the edges. Cool
- *some additions may contain gluten
- Makes 12 large cookies
