Recipe Box, Green Bean Bundle Salad

If types of food were a season, vegetables would be my Spring…

I have even made a Vegetable Tree centerpiece

To amp up an old Southern standby, Green Bean Bundles, I made it into an easy satisfying salad

Employ your microwave to make quick work of the prep

Fresh green beans, in a ready to cook steamer bag, can be blanched in several minutes, no fuss, no mess

Next, microwave the bacon in paper towels until about half way done

Bundle the beans with 1/2 strip of bacon and place in a shallow baking dish

Melt butter in your trusty microwave and add garlic powder and salt

Pour the butter sauce over the bean bundles and sprinkle with brown sugar

Bake at 350 for 30 minutes or until bacon is cooked through

Serve atop crisp greens of your choice, like spinach, romaine, massaged kale or arugula, and pour pan juices over salad.  Season with a little freshly ground black pepper

Green Bean Bundle Salad

Green beans are bundled in bacon and put on top of salad greens for a unique and delicious lo-carb meal

Ingredients

  • 48 fresh green beans
  • 6-8 cups assorted salad greens such as romaine, baby spinach, kale, arugula
  • 3-6 slices bacon
  • 3 T unsalted butter melted
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 3 T brown sugar
  • freshly ground black pepper

Instructions

  • Blanch beans in boiling water until barely tender, or microwave 2-3 minutes.
  • Microwave bacon in paper towels, 1-2 minutes until partially cooked.
  • Cut bacon strips in half. Bundle beans into 6 piles and wrap 1/2 bacon strip, or several 1/2 strips, around each bundle.
  • Place bundles in a shallow greased baking dish.
  • Mix garlic and salt with melted butter and pour over bundles. Sprinkle with brown sugar.
  • Bake at 350 for 30 minutes or until bacon is done. Divide green into individual serving dishes and top with 1-2 bacon bundles. Pour pan drippings over salads. Serve immediately with freshly ground pepper. Makes 3-6 salads
