Party Panache, Beer Cheese Fondue with Tater Tot Kebabs and Endless Possibilities

Next time you have a gathering, try this irresistible, easy to make, fondue to wow your guests

We were hoping to leave Ole Miss in the mud at last Saturday’s football game

Ole Miss has beaten Bama the last two years!  😱

Our daughter and some very good friends are Ole Miss alums, but they weren’t here for the game, so it was ok to have a little fun with Mississippi Mud Beer

You can make this fondue/dip in just a few minutes

Butter, flour, chicken broth, beer, cream, cheese and seasonings

It comes together very quickly

It’s always better to grate cheese yourself if you have time

I used heavy cream instead of the half and half in the photo, to ensure a thick rich texture

Frozen Tater Tots, what could be easier,

And Alexia’s Onion Rings bake up to crispy crunchy perfection in 15 minutes

It was a nail biter of a game!!

Bama was behind until the 3rd quarter  😵

Then Ole Miss scored again

Then Bama…

Back and forth,  back and forth,  Holy Hotty Toddy!

We were madly dipping and noshing to keep up our strength!

Nothing better to settle one’s nerves than a creamy cheesy dip

And potatoes!

Bama squeaked by 48-43, great game Ole Miss!!

You can skewer the potatoes before serving or let guests make their own kebabs.  See all the possibilities for dippers below

This recipe is adapted from Smokey Beer Cheddar Cheese Sauce from The Slow Roasted Italian

Beer Cheese Fondue

Prep Time 15 minutes
Servings 8

Ingredients

  • 1/4 cup real unsalted butter
  • 1/4 cup flour
  • 1 tsp garlic powder
  • 1 T Worcestershire
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 8 oz extra sharp cheddar cheese grated
  • 1/2 cup chicken broth
  • 1/2 cup beer such as Blue Moon Belgian Wheat
  • 3/4 cup heavy cream

Instructions

  • Melt butter in saucepan.
  • Stir in flour, cooking 1-2 minutes, forming a roux.
  • Add dry seasonings. Stir.
  • Add broth and beer. Stir to combine.
  • Add cheese and stir to melt.
  • Finally stir in cream and Worcestershire sauce. Simmer over low heat until hot, stirring occasionally.
  • Serve warm, or transfer to fondue or chafing dish. Serve with tater tots, onion rings, raw or roasted veggies, apples, pears, bread cubes

Notes

Variation:
Add 1 lb of browned breakfast sausage for a thicker and heartier dip

At home the party carried on without us …  🐘

This dip has endless possibilities for dippers!

If we had been hosting a big group I would have added broccoli

fresh or roasted, and baked potatoes or skins

Steamed artichokes, or artichoke hearts

Apple and pear slices

Bread cubes, garlic bread sticks, pretzels, bagel chips, celery…

Tomatoes,  peppers, BLT kebabsTortellini Skewers or ravioli

Cocktail smokies, sausage pieces, pigs in a blanket, seasoned focaccia bread sticks

Keep fondue warm by serving it from a mini crock pot, fondue pot or chafing dish

Individual glasses or cups are great for serving too
