It was a great game, and although we were sad Alabama lost, we still had a great time noshing on delicious food…
I was going to post these recipes later this month in time for the Super Bowl, but I have had so many requests for these recipes I wanted to share them ASAP
They will be perfect for the Superbowl, getting cozy by the fire, or any upcoming event or gathering
This is the menu from Monday night’s game
Tide Pride Fondue is adapted from Olla-Podrida’s Baked Pimento Cheese Dip, and you will be tempted to eat it by the spoonful
It’s a warm version of my favorite Pimento Cheese recipe, with the addition of cream cheese for extra creaminess, and Worcestershire for a kick. If you want more spice add a dash of hot sauce, cayenne pepper or green chilies
Fritos scoops and celery sticks ensured a mouthful of cheesy dip
Pimento Cheese Fondue
Ingredients
- 6 oz extra sharp white cheddar grated
- 4 oz extra sharp cheddar grated
- 4 oz cream cheese softened
- 4 oz chopped pimentos drained well
- 1 tsp Worcestershire sauce
- 1/2 cup Duke’s mayonnaise
- salt & pepper to taste
Instructions
- Mix everything together, using a food processor and pulsing if desired. Place in a greased 1 quart baking dish and bake at 350 for 20-25 minutes until heated through and melted. Transfer to small fondue pot or chafing dish to keep warm while serving. Serve with Fritos Scoops, Tortilla Scoops, celery sticks. Makes about 2 cups.

Fresh green beans, tips trimmed, are battered with
Tempura Batter Mix
and fried until golden

Ingredients
- fresh green beans 5-6 per person
- tempura batter mix
Instructions
- Cut of tips of beans. Prepare batter according to package directions. Dip beans in batter and deep fry until golden, 4-5 minutes. Drain on paper towels and season with salt and pepper
- serve with sweet and sour sauce, Asian vinaigrette or honey mustard for dipping if desired

The cheeseburger is made with cooked ground beef and Italian sausage, seasoned with salt, pepper, and a dash of Dale’s or steak sauce, a cube of cheese, all wrapped in a piece of biscuit dough, and wrapped in bacon and secured with a toothpick
And then fried… 😳
I know, not exactly healthy New Year’s resolution food
But you can have 1, they’re smallish…

Touchdown Burger Bombs
Ingredients
- 1/2 lb ground chuck
- 1/2 lb ground Italian sausage
- 1 can Pillsbury Grands Biscuits
- 16 slices bacon cut in half
- 8 oz cheddar cheese cut into 32 cubes
Instructions
- Quarter biscuits and press dough into flat thin pieces. Top dough with some meat around a cube of cheese. Enclose meat and cheese into a ball or log pressing dough edges together to seal. Wrap in a bacon piece and secure with toothpick.
- Deep fry dough balls in 375 degree peanut oil. Balls cook quickly, 2-3 minutes. Drain immediately on paper towels. Serve warm.
Tiger Tails are BBQ chicken drumettes, grilled until cooked through and slathered with BBQ sauce during the last few minutes of cooking
