Have you been good this year?

Santa’s watching you know…

And he has a large supply of coal!

The elves make it for him

They melt chocolate and butterscotch chips

Then they add peanut butter

They stir it until smooth

Then they pour in the nuts*

*they also make peanut free coal by substituting chex cereal for peanuts

and almond butter for peanut butter

They work quickly, placing spoonfuls of the candy mixture on parchment paper

and sprinkling it with black decorating sugar before the chocolate sets

It’s cold at the North Pole and the candy sets up quickly,

but you should put yours in the refrigerator to set,

then place it in a covered container and store in the refrigerator

So you’d better be good, Santa’s watching!

Coal Candy

Ingredients

  • 6 oz. butterscotch chips
  • 6 oz. milk or dark chocolate chips
  • 2 cups dry roasted peanuts*
  • 1/4 cup creamy peanut butter*
  • black decorating sugar**

Instructions

  • Melt chocolate in a double boiler or in the microwave. If you use the microwave use 50% power and stir after every 30 seconds.
  • When chocolate is almost melted stir in peanut butter. Stir well until peanut butter is incorporated and chocolate is completely melted.
  • Stir in nuts.
  • Working quickly, place large spoonfuls of mixture on a parchment lined baking sheet. Sprinkle with sugar. Transfer baking sheet to refrigerator for chocolates to set up.
  • Put cooled candy into a covered container and store in refrigerator or cool place until serving. Makes about 2 1/2 dozen.

Notes

*for non peanut version substitute chex cereal for nuts and almond butter for peanut butter
**use sea salt or kosher salt instead of sugar for a salted candy
