Recipe Box, Easy Bake Lemon Bars

I am all about lightening and brightening this week, as day after dreary January day goes by

When I was preparing the January Paint Bucket, my monthly list of recipe inspiration, I stumbled upon so many recipes for easy lemon bars with a small number of ingredients, and many of the recipes are exactly the same

I ended up choosing a recipe from The Country Cook

It only has 3 ingredients and is ridiculously easy to make

You can mix in up right in the baking dish

Cream the butter into the dry cake mix and reserve some for the topping

Top with dollops of pie filling

Spread out into an even layer on top of crumbly base

Top with reserved crumbs

And bake!

Note:  Let dish cool completely and then refrigerate for a while before cutting into bars.  Store bars in a covered container in the refrigerator

These are not exactly diet food, however, if you cut this into 24 bars, each bar is only about 135 calories

Easy Bake Lemon Bars

A cake mix makes this recipe super easy!

Ingredients

  • 1 box yellow or lemon moist cake mix
  • 8 Tbsp unsalted butter, softened
  • 1 can 21 oz. lemon pie filling
  • Preheat oven to 350 degrees

Instructions

  • Preheat oven to 350 degrees
  • Spray a 9″ x 13″ baking dish thoroughly with cooking spray. Pour cake mix into pan and top with butter.
  • Using a fork, push butter into dry mix until it is all incorporated as evenly as possible.
  • Reserve about 1/4 cup of crumb mixture for topping. Press into an even layer.
  • Using a large spoon, top batter with dollops of lemon pie filling and then spread the filling evenly over base.
  • Top filling with reserved crumbs.
  • Bake for 25-35 minutes until base seems set and begins to turn golden.
  • Cool dish, then cover and refrigerate before slicing into bars.* Store bars in a covered container in the refrigerator.
