I have an easy summer treat for you today
Creamsicle cheesecake in a jar
Crumbled shortbread cookies
layered with a creamsicle filling and whipped cream cheese
A few simple ingredients
Jello
Mixed with Cool Whip
Cream cheese beaten with sugar and vanilla and orange extract
Then combined with Cool Whip
Crushed cookies
And 1/2 pint jars
Place a layer of crumbs in the bottom of jars
Layer the creamsicle filling and cheesecake whipped cream on top
Messy work!
You could take more time and make pretty even layers,
more photogenic…
but messy or perfect they’ll still taste great!!
Once the jars are filled, clean up the edges with a damp cloth
Sprinkle a few cookie crumbs on top
Replace the lids and refrigerate for at least 4 hours to set
My family will be arriving today for the weekend
These jars are tucked in the fridge ready to grab and enjoy outside
Desserts in a jar are so easy, no mess,
and empty jars go straight to the dishwasher
This recipe is adapted from Olla-Podrida

CREAMSICLE CHEESECAKE IN A JAR
Equipment
- 8 1/2 pint jars
Ingredients
- shortbread cookies or any cookie you like {I used 16 Keebler Sandies cookies}
- 2 8 oz. pkg cream cheese softened
- 1 tsp vanilla extract
- 1 tsp orange extract* *optional to boost orange flavor
- 1 3.3 oz box orange Jello
- 1 cup boiling water
- 1/2 cup powdered sugar
- 1 8 oz. Cool Whip thawed
Instructions
- Combine jello with boiling water, whisking to dissolve. Set aside to cool completely, about 1 hour.
- Beat cream cheese, powdered sugar, and vanilla or orange extract until smooth.
- Add 1/2 of Cool Whip to cooled jello mixture and stir until mixed
- Add the rest of the Cool Whip to the cream cheese mixture and fold to combine.
- Crumble cookies by placing them in a ziplock bag and smashing them with a rolling pin or can. Place a layer of cookie crumbs in the bottom of each jar. Layer the cream cheese mixture and jello mixture in jars on top of cookies. Finish with a sprinkle of cookie crumbs. Place lids on jars and put in the refrigerator to set, at least 4 hours before serving.
- Will keep in refrigerator 5-7 days.
