Party Panache, Magic Mini Meatball Muffins

In the mood for some hearty party bites,

I perused appetizer recipes on Pinterest

I combined several elements and ingredients from different recipes

and came up with these mini meatball bites

You have to make these~

they will disappear like magic!!

The meatballs are made with ground beef and breakfast sausage,

seasoned with Montreal Steak seasoning,

BBQ sauce, and sharp cheddar cheese

First combine the 2 meats, season and drizzle with BBQ sauce

Mix in seasonings and BBQ sauce

Add the cheese

It’s best to use your hands to combine meats and cheese

Form mixture into 1 inch meatballs

Cut biscuits into quarters

Use your fingers to form little cups with biscuit quarters

and place them into a sprayed mini muffin pan

Place a meatball into each biscuit cup

These can be made ahead and refrigerated until baking if desired

Bake at 400 for 10-13 minutes until golden and melty

Watch them disappear!

Magic Mini Meatball Muffins

These meatballs are made with sausage and ground beef, seasoned with steak seasoning, BBQ sauce, and cheddar cheese and baked in a pillow of biscuit dough…watch them disappear!

Equipment

  • mini muffin pan

Ingredients

  • 1/2 lb ground beef
  • 1/2 lb breakfast sausage
  • 1 tsp Montreal Steak seasoning
  • 1/4 cup BBQ sauce
  • 1 cup extra sharp grated cheddar cheese
  • 1 can 8 count, biscuits

Instructions

  • Combine meats.
  • Add seasoning and drizzle with BBQ sauce.
  • Add cheese and mix well. Form into about 40 balls.
  • Quarter biscuits. Spray a mini muffin pan with cooking oil spray.
  • Using your fingers form each biscuit quarter into a cup shape and place into pan
  • Top biscuit cups with one meat ball. Freeze remaining balls for another time or make an additional batch with another can of biscuits
  • Bake at 400 degrees for 10-13 minutes or until dough is cooked through and golden and meatballs are done.
