Take-out Tuesday, Sweet Orange BBQ Chicken Thighs

This recipe,

inspired and adapted from my friend Lynn @happierthanapiginmud

is perfect for an easy and delicious summer meal

Our favorite part of the chicken is the thighs,

skinless boneless thighs are not only inexpensive,

they stay juicy

and have so much more flavor than boneless chicken breasts

The sauce is so simple and so incredibly good,

and only 4 ingredients!

Mix equal parts orange marmalade with your favorite BBQ sauce,

add a dash of soy sauce and garlic powder to taste,

and get the grill going!

Grill the chicken until it is almost done

Then brush the chicken with sauce and cook for a few more minutes

Time depends on the size of the chicken pieces,

and grill temperature, and whether you’re cooking direct or indirect…

Use a thermometer to check doneness,

you want it to read 165 degrees F

Sweet Orange BBQ Chicken Thighs

orange marmalade and garlic powder combined with your favorite BBQ sauce and brushed onto grilled chicken thighs for a tangy dinner meal!

Ingredients

  • 1/2 cup BBQ sauce
  • 1/2 cup orange marmalade
  • garlic powder
  • soy sauce
  • 6 boneless skinless chicken thighs

Instructions

  • Combine marmalade and BBQ sauce. Add a dash of soy and garlic powder and stir to combine. Taste and adjust seaoning to your liking.
  • grill chicken until it reaches an internal temp of 165 degree F, brushing with sauce during the last few minutes of cooking
  • Cooking time will depend on type of grill and size of chicken, use a meat thermometer to check for doneness
  • Serves 3-6

Notes

makes approximately 1 cup sauce, refrigerate any leftover for another time.
