Take-out Tuesday, Autumn Celebration Pizza

With cooler temperatures

HHjr fired up the pizza oven Saturday night

and cooked pizzas to enjoy

while we watched the Alabama game

I had a flatbread in my mind that I’d been concocting

over the past couple of days,

so we added it to our usual kid friendly menu

of cheese pizza, and pineapple/Canadian bacon

HHjr got the kids involved making their pizzas,

while I made the Autumn Celebration Pizza

that I’d envisioned

This pizza is full of fall flavors with honeycrisp apples,

caramelized onions, roasted garlic, maple sausage,

roasted butternut squash,

all melted together with extra sharp cheddar

and a sprinkling of bleu cheese

Season the squash and drizzle with olive oil

Roast squash at 400 degrees for 20 minutes, until soft

While squash is roasting,

caramelize the onions, low and slow, about 20 minutes

Next, brown the sausage

Cut the apple into thin slices

Partially bake crust, 6-8 minutes

until it just begins to turn golden

Spread roasted garlic evenly over crust

Layer the ingredients on crust, starting with the onions

Apples

extra sharp Cheddar Cheese

Maple Sausage

Roasted Butternut Squash

A generous sprinkle of Bleu Cheese Crumbles

Return to the 400 degree oven for 10-12 minutes until heated through

Cut into squares and enjoy!

Autumn Celebration Pizza

This pizza is full of Fall flavors, butternut squash, maple sausage, honeycrisp apples, caramelized onions, roasted garlic, all melted together with extra sharp cheddar and bleu cheese crumbles

Ingredients

  • 1 can Pillsbury thin pizza crust dough
  • 8 oz. maple breakfast sausage
  • 2 cups butternut squash cubes
  • 1 sweet onion, sliced
  • 1 head garlic, roasted*
  • 1 honeycrisp apple, sliced
  • 4 oz. extra sharp cheddar cheese, grated
  • 3-4 oz. bleu cheese crumbles
  • 1 Tbsp butter
  • olive oil
  • salt & pepper

Instructions

  • Put butternut squash on a parchment lined baking sheet and season with olive oil, salt, and pepper. Roast at 400 degrees for 20 minutes or until soft
  • Melt butter with 1 Tbsp olive oil in large skillet over medium low heat. Add onions and cook, stirring occasionally until onions turn golden and caramelize, about 20-25 minutes. Set aside
  • Add sausage to skillet and increase heat to medium. Cook and stir sausage to crumble, until cooked through and brown.
  • Drain sausage on paper towels.
  • Place pizza crust dough on a greased baking sheet, prick dough all over with a fork, and bake at 400 degrees for 6-8 minutes until dough begins to set and turn golden
  • Squeeze roasted garlic head until it releases the soft garlic inside and spread evenly over partially baked crust
  • Top crust with an even layer of caramelized onions, then apples, then cheddar cheese
  • Place sausage on top of cheese layer, then top with roasted butternut squash and sprinkle bleu cheese crumbles over all
  • Return to 400 degree oven for 10-12 minutes until pizza is heated through and cheese has melted.
  • Cut into squares to serve

Notes

*cut off top of garlic head to expose the cloves.  Place on a square of foil and drizzle with olive oil, salt & pepper. Bring corners of foil together forming a package. Roast garlic in a 400 degree oven for 1 hour.  Can be done in advance and stored in refrigerator.
