This is a great fast and satisfying busy weeknight meal
and a way to change up the usual hamburger
Not a bleu cheese fan?
Substitute another flavorful cheese~
I know I post a lot of recipes that include bleu cheese,
that’s because it’s one of my very favorite things
There is ALWAYS homemade Bleu Cheese Dressing in my fridge
Bleu cheese is such a great flavor addition
and it marries so well with steak, or on a burger…
A Quesadilla full of seasoned beef and a flavorful cheese
makes a mouthwatering, easy meal
You don’t need a lot of ingredients either,
besides hamburger meat, cheese and tortillas,
all you need is an onion,
a dash of Worcestershire sauce and a sprinkle of garlic powder
with optional lettuce and tomato on the side
Saute onion until transparent
Add the hamburger meat and cook until browned
and drain off fat
{I recommend 80/20 ratio ground beef because
it has more flavor than the extra lean ground beef}
Season the beef with Worcestershire sauce,
salt, pepper and a dash of garlic powder
I like to brown my tortillas quickly in a skillet
with a little olive oil before filling,
but you can skip this step if desired
and just let them brown up in the oven once filled
Sprinkle tortillas with a generous layer
of bleu cheese crumbles or other grated cheese
Top with an even layer of cooked beef
Top with more cheese
Top with an another tortilla
Bake at 400 degrees for about 15 minutes,
until cheese has melted and the tortillas are golden
NOTE: If you haven’t precooked your tortillas, brush or spray them with olive or canola oil before baking. Turn quesadillas half way through cooking and oil the other side and continue to bake until done
Cut tortillas into quarters
Serve with traditional burger toppings
like crispy lettuce and sliced tomatoes
Dinner’s ready!
BLEU CHEESE BURGER QUESADILLAS
Ingredients
- 1 lb ground beef
- 6 oz. crumbled bleu cheese*
- 1 large sweet onion diced
- olive oil
- salt and pepper
- garlic powder
- 2 T Worcestershire sauce
- 8 flour tortillas**
- lettuce
- tomato slices
- salad dressing optional
Instructions
- Saute tortillas with a little olive oil over medium high heat until golden on both sides. Drain on paper towels.
- Add a little more olive oil to pan and cook onion until transparent. Add beef and continue to saute until brown, using spoon to crumble beef while cooking. Drain excess fat. Add Worcestershire sauce, a dash or two of garlic powder, and season with salt and pepper.
- Lay 4 tortillas on a baking sheet. Top with a layer of crumbled bleu cheese. Divide beef between tortillas and make an even layer. Top with remaining cheese. Top with remaining 4 tortillas. Bake at 400 degrees for 10-15 minutes, or until cheese has melted and quesadillas are golden. Carefully cut into 1/4s. Serve with lettuce and tomato on the side, drizzled with salad dressing if desired. Serves 4
Notes
When the weather’s not cooperating,
or it’s too hot or cold to grill
This is a great way to get your burger fix!
