Throwback Thursday, Bleu Cheese Burger Quesadillas

This is a great fast and satisfying busy weeknight meal
and a way to change up the usual hamburger
Not a bleu cheese fan?
Substitute another flavorful cheese~

I know I post a lot of recipes that include bleu cheese,
that’s because it’s one of my very favorite things
There is ALWAYS homemade Bleu Cheese Dressing in my fridge
Bleu cheese is such a great flavor addition
and it marries so well with steak, or on a burger…
A Quesadilla full of seasoned beef and a flavorful cheese
makes a mouthwatering, easy meal

You don’t need a lot of ingredients either,
besides hamburger meat, cheese and tortillas,
all you need is an onion,
a dash of Worcestershire sauce and a sprinkle of garlic powder
with optional lettuce and tomato on the side

Saute onion until transparent
Add the hamburger meat and cook until browned
and drain off fat
{I recommend 80/20 ratio ground beef because
it has more flavor than the extra lean ground beef}
Season the beef with Worcestershire sauce,
salt, pepper and a dash of garlic powder

I like to brown my tortillas quickly in a skillet
with a little olive oil before filling,
but you can skip this step if desired
and just let them brown up in the oven once filled
Sprinkle tortillas with a generous layer
of bleu cheese crumbles or other grated cheese

Top with an even layer of cooked beef

Top with more cheese

Top with an another tortilla

Bake at 400 degrees for about 15 minutes,
until cheese has melted and the tortillas are golden
NOTE: If you haven’t precooked your tortillas, brush or spray them with olive or canola oil before baking. Turn quesadillas half way through cooking and oil the other side and continue to bake until done

Cut tortillas into quarters

Serve with traditional burger toppings
like crispy lettuce and sliced tomatoes

Dinner’s ready!

Notes
When the weather’s not cooperating,
or it’s too hot or cold to grill
This is a great way to get your burger fix!

Enjoy!
Lately some comments are posting anonymous instead of with your name even though you’ve commented before~ This is happening to me too when I am visiting some blogs. I have found that if I use a different browser, like Chrome, it doesn’t happen. I apologize, and I’ve talked to WordPress about this and all they said was that you have to fill out the form that pops up and fill in your name and email. I know this can be a pain, so if you’re comments are posting anonymously just add your name to the end of your comment~ I’d love to know who I’m chatting with! Thank you so much!

Thanks Mary, is it happening to you on any other blogs? I know Pam is having it happen to her too…
I reported the issue to WordPress. My Happiness Engineer says there have been many reports and they suspect a bug. He also asked for anyone having issues to report it as it becomes a higher priority.
What a delicious and quick meal! Thank you!

Suddenly WordPress is having multiple issues. I can’t my comments to post on 2 other sites even if I fill out the form. I’m hoping this goes through.
Thanks for letting me know, your name is coming through with your comments, hopefully they’ll get it sorted out soon…
Your quesadillas look delicious. And here’s the form again, but at least something is posting.

Easy peasy dinner idea Jenna. I would skip the bleu cheese and add cheddar.

Kari
Thanks Kari, I love to make quesadillas for a quick meal, they’re a great way to use up leftovers too~ I hope you can stay cool in your pool!
I am a HUGE Danish bleu fan, so I am going to try these! I like to try things that are a bit different from time to time…even if my husband gets all fidgety because of it! Of course, because I’m old with old lady digestive issues it will be necessary to sub in ground chicken for the ground beef, but I’m accustomed to it by now. I have some Castello Danish Bleu slices that I found at either Costco or Sam’s. I’ll just slap those bad boys on there and go!
Bleu cheese makes everything better!
Our favorite kind of burger!! That whole plate looks so inviting! Thanks for sharing at the What’s for Dinner party. Hope you’re enjoying the last weekend of summer.
Thanks Helen, makes a great quick and easy meal!
