Party Panache, Slow Cooker Loaded Taco Dip

This is just as much an idea as a recipe~

Over Labor Day weekend at the beach house we had a taco night

and I had a ton of meat leftover

I put it in a plastic container along with the leftover grated cheese,

red onions, and chopped peppers that we had for toppings,

and tucked it into the freezer

We went back to the beach last weekend,

since the kids had a Fall break from school Friday and Monday,

and the weather was amazing!

I knew the frozen taco things would make a great dip

for watching football on Saturday

I had a can of refried beans in the pantry,

and a Mexican cheese blend in the fridge,

perfect for turning the meat into a yummy dip!

I put the still partially frozen meat mixture into the slow cooker

and let it cook on low for an hour to defrost

Then I stirred it up and added the refried beans

I let that cook for another hour and then added the cheese

I stirred in the cheese

I let it cook for another hour and then it was ready for dippers!

I served it with Fritos Scoops, but any sturdy tortilla chip will work

The guys were starving after fishing all day,

it was Charlie Brown’s first time going with his Dad, Uncle and older cousin~

He LOVED it!

The dip was perfect for happy hour nibbling

and gearing up to watch the Bama game at 7

Loaded Taco Dip

Use your leftover taco meat and toppings and turn them into a party dip! Or just make the dip, either way, it's a crowd friendly hearty dip, great for game days and noshing

Equipment

  • slow cooker

Ingredients

  • 4 cups prepared taco meat* see note
  • 1 can 16 oz. refried beans
  • 2 cups grated Mexican cheese blend
  • chopped red, green and yellow peppers to taste optional
  • chopped red onion to taste optional

Instructions

  • Place meat into a sprayed or lined slow cooker and add refried beans
  • Cook on low for 2 hours
  • Add cheese, stir, and cook on low for another hour
  • Serve with sturdy chips such as Frito Scoops

Notes

You can also put the ingredients into a casserole dish and bake at 350 degrees until heated through
 
*Taco Meat
1 lb ground beef or ground chuck
1 pkg taco seasoning
brown meat and add taco seasoning as directed on the package
