It has been unseasonably cold here this past week,
as it has been in many places in the US,
perfect weather for a steaming bowl of hearty soup!
After making Easy Cheesy Pulled Pork Enchiladas with leftover pulled pork
there was still a little pulled pork left,
Perfect for making little pork buns to pair with
this slow cooker Broccoli and Asiago Soup
With a bag of broccoli florets, jarred minced garlic,
grated Asiago cheese and diced onion
This soup comes together in minutes
{this recipe also calls for chicken broth, not pictured}
Spray or line your slow cooker
and add the broccoli, onions and garlic
Stir it around to mix
and then add the cream cheese, sprinkle with Italian seasoning
and pour in the broth
Cover and cook on low for 3 1/2 -4 hours
Add the Velvetta and evaporated milk
Replace cover and continue to cook for 30 minutes to melt Velveeta
then use an immersion blender to puree the soup
Add the Asiago cheese, replace the cover
and cook for 15-30 more minutes to melt cheese
Garnish with grated cheddar cheese and serve
I made little BBQ pork buns to go with the soup
I cut the baked Cornbread Swirls in half,
filled them with pulled pork drizzled with BBQ sauce
and wrapped them in foil heated them in the oven
Slow Cooker Broccoli Asiago Soup

- slow cooker
Ingredients
- 1 bag Broccoli florets, about 6 cups or 2 heads broccoli crowns
- 1 yellow onion, diced
- 2 tsp minced garlic
- Italian seasoning
- 4 oz cream cheese, softened
- 8 oz Velveeta cheese, cut in large cubes
- 1 can 12 oz, evaporated milk
- 2 1/2 cups chicken broth
- 4 oz grated Asiago cheese
- grated sharp cheddar for garnish, optional
Instructions
- Spray or line a slow cooker
- Put broccoli, onion and garlic into slow cooker and stir to combine
- Add cream cheese and sprinkle with Italian seasoning to taste
- Pour in chicken stock, stir, cover and set to low
- After 3 1/2-4 hours add Velveeta cheese and evaporated milk
- Replace cover and cook for 30 more minutes
- Puree soup with an immersion blender to desired consistency
- Add Asiago cheese, cover and cook for 15 more minutes to melt
- Serve garnish with grated cheddar
