Father’s Day Menu

Happy Father’s Day to all the amazing Dads out there!

My son took a couple days off last week

and headed to the beach house with friends

for a guys weekend of fishing and relaxing

He loves to cook, but I’m cooking for him today

I made a batch of his favorite Chex Mix

He loves enchiladas so I made

Easy Cheesy Corn & Pulled Pork Enchiladas

yesterday and they are ready to pop in the oven for dinner tonight

I bought a Key Lime Pie from the bakery for dessert,

but if you want to make one,

try 5 Minute Key Lime Ice Cream Pie

or Key Lime Pie Minis

Lemon Blueberry Rolls are ready for breakfast tomorrow

so he can fuel up before work

When he walks into the kitchen he will see this vignette

I bought him an assortment of special sauces~

Bourbon Honey marinade, bourbon is a favorite

Bacon Caesar Dressing because he loves Caesar salad and bacon

Alabama Nick’s Saban Sauce

since he’s an Alabama alumni and a huge Bama fan

I found a new item made by my favorite mayonnaise,

Duke’s Alabama White BBQ sauce

He will have fun experimenting with all of these

This is our family favorite recipe for Chex Mix

Family Favorite Chex Mix

Our favorite snack mix, with Chex cereal, honey roasted peanuts, cashews, Cheez it crackers
Course Appetizer, Gift, Snack
Cuisine American

Prep Time 10 minutes
Cook Time 40 minutes

Equipment

  • rimmed baking sheet

Ingredients

  • 1/2 box each Rice Chex and Corn Chex cereal
  • 2 cups Honey Roasted Peanuts I like Planters
  • 2 cups roasted and salted Cashews
  • 2 cups Cheez-it crackers [optional]
  • 1/4 cup olive oil
  • seasoned salt
  • 10 dashes Worcestershire sauce

Instructions

  • Put Chex cereal on a rimmed cookie sheet or broiler pan
  • Top with nuts and crackers and sprinkle seasoned salt lightly overall.
  • Put 1/4 cup olive oil in measuring cup and add about 10 really healthy dashes of Worcestershire.
  • Mix well and pour over cereal and nuts. Stir gently until mix is coated. If it seems too dry mix a little more oil and Worcestershire together and add until mixture seems well coated but not too wet.
  • Bake at 275 for 20 minutes, stir well and return to oven for 20 more minutes. I
  • After baking immediately spread mix on paper towel lined counter until cool.
  • Store in large tupperware container or glass jars
