1/2cupAlmond butter [ I like Justin’s Maple Almond Butter]
1/3cupmarcona almondschopped
1Tablespoonpeanut oil
2TablespoonsCoconut Syrup
2Tablespoonsbrown sugar
1/2tspalmond emulsion* or extract
1/3cupsemi sweet chocolate chips
1/4cupdried sweetened coconut
Instructions
Put almond butter in a mixing bowl or 1 quart measuring cup and add oil, coconut syrup, and almond emulsion or extract. Microwave 1 minute on high to melt. Stir in oats and almonds. Stir well and spread into an even layer on baking sheet.
Bake at 275 for 15 minutes, sprinkle with coconut and return to oven for 15 more minutes. Sprinkle evenly with chocolate chips and set aside to cool.
8 servings, 1/4 cup granola per serving, approx. 250 calories each or 2 Tablespoons=125 calories
