Pineapple Salsa
This is a perfect topping for your summertime cookouts, try it on burgers, hot dogs, boneless chicken breasts or thighs

Adjust ingredients for the amount needed
- 1 large vidalia or sweet onion sliced very thin
- 1 cup diced fresh pineapple {you can sub canned tidbits, drained}
- 1 T unsalted butter
- 1 T olive oil
Saute onion in butter and olive oil over medium heat, stirring occasionally until it starts to brown, about 15 minutes.
Add pineapple and stir to combine. Set aside or refrigerate until needed. Makes about 2 cups.
