Recipe Box, Burgers with Spiralized Onion & Pineapple Salsa & Everything Potato Chips

I’m focusing on using my spiralizer this month and I just discovered the best tip!
If you make one cut from the center out to the edge of the food you want to spiralize, it produces thin slices like a mandolin!
How did I not know this, not everything has to be a noodle!
This is life changing for me because I’m not the type that should use a mandolin π€ π₯
Potato Chips!!
Onion rings!
And how about this “not your average burger & fries…”
Get this pineapple salsa topped cheeseburger in your life as soon as possible!
Even though most people think Mexican and spicy when salsa is mentioned in the culinary world, it is actually a term used widely in other languages meaning sauce
This pineapple onion salsa is tangy sweet and the perfect compliment to a smokey grilled burger with extra sharp Vermont white cheddar π
While you’ve got the spiralizer out, slice a potato
Look at those lovely paper thin slices!
Toss the potato slices with a little peanut oil {or your preferred oil}
I leave the peel on for extra nutrition, but you can peel it if you prefer
Place the slices on a parchment lined pan in an even layer and sprinkle with Everything Seasoning
I got some at Trader Joe’s, but it’s super easy to make, see my recipe here

Bake for 15 minutes, then flip or stir them around evenly and return to oven for 10-15 more minutes, watching carefully towards the end
Hit them with a little salt when they’re hot out of the oven if needed {will depend on your seasoning blend}
Baked, not fried!
This dinner was so easy to throw together and we raved about it {between bites} as we were eating
This salsa would be great on chicken, fish, pork, just about anything!

Spiralized Onion & Pineapple Salsa
Ingredients
- 1/2 large vidalia or sweet onion sliced very thin*
- 1/2 cup diced fresh pineapple {you can sub canned tidbits, drained}
- 1/2 T unsalted butter
- 1/2 T olive oil
Instructions
- Saute onion in butter and olive oil over medium heat, stirring occasionally until it starts to brown, about 15 minutes. Add pineapple and stir to combine. Set aside or refrigerate until needed. Makes about 1 1/2 cups.

Everything Potato Chips
Ingredients
- 1 large baking potato {russet} washed, peeling is optional
- 1-2 T peanut vegetable, canola or olive oil
- 2 T everything bagel seasoning or to taste
Instructions
- Slice potato into very thin slices*
- Toss with oil and place on a parchment lined baking pan in a single even layer. Sprinkle with everything seasoning. Bake at 400 for 15 minutes. Check and stir/flip slices. Continue to bake for another 10-15 minutes, checking often and removing done pieces as needed. Be careful not to burn near end of cooking time.
- If you want to make more servings increase the number of pans, potatoes must bake in a single layer to cook properly. Potatoes will crisp up further as they cool.

I used to have my students make these potato chips, and we dusted them with parmesan cheese – they were always a hit (and a blessing when no one sliced the tip of their finger!)

Jenna, this makes my salad that I just ate really sad! Theburgers with the pineapple salsa and the baked potato chips, and the onion rings sound and look incredible! We love to grill burgers…the salsa is a must have. I don’t have a spiralizer but I need one!
