Brown sausage, breaking it down into small crumbles as it cooks. Drain well on paper towels.
Cut biscuits into 1/4s and place dough pieces in a mixing bowl. Add sausage and cheese.
Add apples on top and using a sharp knife, cut across apples to make smaller pieces. Doing this in the mixing bowl keeps from having a sticky mess on the cutting board.
Toss with your fingers, gently mixing ingredients evenly.
Place a handful of mixture into well-greased muffin tins , with 2-3 biscuit pieces in each tin.
Bake at 350 for 15-20 minutes, or until dough is cooked through and golden.
Let muffins cool 5 minutes, then carefully remove to a serving plate. Store leftovers in the refrigerator, and reheat in microwave for 30-60 seconds per muffin.
