large russet potatoes
scrubbed
olive oil spray
olive oil
kosher or sea salt and freshly ground pepper

cloves
garlic
minced

fresh flat leaf parsley
chopped
Instructions
Cut potatoes in half horizontally, then cut each half into 6 thick slices, then cut the larger slices in half again, forming potato fingers or planks.
Place potatoes on a foil lined baking sheet that has been generously sprayed with olive oil spray.
Drizzle liberally with olive oil and season well with salt and pepper.
Bake at 400 for 30 minutes, flipping after 15 minutes if possible.
Increase oven to 450 and return potatoes to oven for 10 more minutes or until browned around edges.
Mix 1/2 Tablespoon olive oil with garlic and parsley.
When potatoes are done, drizzle them with the garlic mix and toss to coat evenly. Serve immediately. Makes 4 servings
