Steak House Fries with Garlic and Parsley

Ingredients
  

  • 2 large russet potatoes scrubbed
  • olive oil spray
  • olive oil
  • kosher or sea salt and freshly ground pepper
  • 4 cloves garlic minced
  • 2 T fresh flat leaf parsley chopped

Instructions
 

  • Cut potatoes in half horizontally, then cut each half into 6 thick slices, then cut the larger slices in half again, forming potato fingers or planks.
  • Place potatoes on a foil lined baking sheet that has been generously sprayed with olive oil spray.
  • Drizzle liberally with olive oil and season well with salt and pepper.
  • Bake at 400 for 30 minutes, flipping after 15 minutes if possible.
  • Increase oven to 450 and return potatoes to oven for 10 more minutes or until browned around edges.
  • Mix 1/2 Tablespoon olive oil with garlic and parsley.
  • When potatoes are done, drizzle them with the garlic mix and toss to coat evenly. Serve immediately. Makes 4 servings
