Summer Peach Party Dip
This is a hot onion dip loaded with bacon, cheddar cheese and fresh summer peaches. Make it ahead of time, bake and serve with crackers, chips, baguette slices or celery sticks

1 quart baking dish
Ingredients

strips bacon
1
ripe peach, peeled diced
1
vidalia onion, diced
1
package cream cheese, softened
I use whipped cream cheese
1/2
cup
mayo
1
cup
shredded cheddar cheese
I use Creamy Melt Triple Cheddar
Instructions
Cook bacon in skillet or in the oven until crisp and reserve 1 Tablespoon of the rendered fat
Put the fat into a skillet and saute the onion and peaches over medium heat until softened, 4-5 minutes
Spray a 1 quart baking dish with cooking spray and add mayonnaise and cream cheese.
Mix together and add bacon, onions and peaches and mix again
Mix in the grated cheese
Cover and refrigerate at this point for baking later or the next day if desired
Bake at 375 degrees for 25 minutes or until heated through and bubbly
Serve with crackers, chips, baguette slices or celery sticks
Notes
Leftovers can be reheated, covered in a 350 degree oven
