Party Panache, Summer Peach Party Dip

It doesn’t have to be a special occasion to have a dip~

My family loves to have a dip to nibble on

late in the afternoon while dinner is cooking

Last week at the beach I made a new one~

This peach and bacon dip is crazy good!

Cream cheese and mayonnaise

are mixed with bacon, cheese, vidalia onions

and a surprise ingredient, peaches!

Chop the peach and onion and give it a quick saute

in a little reserved bacon grease*

* I usually cook bacon on a parchment lined sheet pan in the oven

so I simply transferred a little of the rendered fat

from the parchment paper to a skillet

You can mix everything right in the baking dish~

Combine the cream cheese with mayonnaise and bacon

in a greased 1 quart casserole

Then stir in the onions and peaches

Then the cheese

At this point you can cover it and refrigerate for baking later

or even the next day

Bake at 375 degrees for 25 minutes or until heated through and bubbling

Serve with crackers, sturdy chips, baguette slices or celery sticks

Summer Peach Party Dip

This is a hot onion dip loaded with bacon, cheddar cheese and fresh summer peaches. Make it ahead of time, bake and serve with crackers, chips, baguette slices or celery sticks

Equipment

  • 1 quart baking dish

Ingredients
  

  • 6 strips bacon
  • 1 ripe peach, peeled diced
  • 1 vidalia onion, diced
  • 1 package cream cheese, softened I use whipped cream cheese
  • 1/2 cup mayo
  • 1 cup shredded cheddar cheese I use Creamy Melt Triple Cheddar

Instructions
 

  • Cook bacon in skillet or in the oven until crisp and reserve 1 Tablespoon of the rendered fat
  • Put the fat into a skillet and saute the onion and peaches over medium heat until softened, 4-5 minutes
  • Spray a 1 quart baking dish with cooking spray and add mayonnaise and cream cheese.
  • Mix together and add bacon, onions and peaches and mix again
  • Mix in the grated cheese
  • Cover and refrigerate at this point for baking later or the next day if desired
  • Bake at 375 degrees for 25 minutes or until heated through and bubbly
  • Serve with crackers, chips, baguette slices or celery sticks

Notes

Leftovers can be reheated, covered in a 350 degree oven

    Oh my goodness Jenna – this dip does sound quite different! I don’t think I ever would have thought about mixing peaches with bacon and onions – but hey, why not?
