4-6ozRonzoni Super Greens Thin Spaghetti or any pasta of choice
Pumpkin Alfredo
1/3cupchicken stock
1/4cupcream or half and half cream
1/2cupcanned pumpkin [not pumpkin pie filling]
dash ground cinnamon
dash freshly grated nutmeg
salt and pepper
2-3oz.freshly grated Parmesan or Italian blend cheesedivided
Instructions
Cook pasta in boiling salted water until al dente. Meanwhile simmer cream with pumpkin and chicken stock until hot. Season and add 1/2 of cheese. Keep hot until pasta is done.
Drain pasta and return to sauce pan. Add sauce and stir to coat thoroughly. Spoon into pasta bowls and top each serving with a sprinkle of cheese.
Notes
*increase amounts if you want more sauce, and adjust quantities to make sauce thinner or thicker
