Super Greens Pasta with Parmesan Pumpkin Alfredo

Ingredients
  

Pasta

  • 4-6 oz Ronzoni Super Greens Thin Spaghetti or any pasta of choice

Pumpkin Alfredo

  • 1/3 cup chicken stock
  • 1/4 cup cream or half and half cream
  • 1/2 cup canned pumpkin [not pumpkin pie filling]
  • dash ground cinnamon
  • dash freshly grated nutmeg
  • salt and pepper
  • 2-3 oz. freshly grated Parmesan or Italian blend cheese divided

Instructions
 

  • Cook pasta in boiling salted water until al dente. Meanwhile simmer cream with pumpkin and chicken stock until hot. Season and add 1/2 of cheese. Keep hot until pasta is done.
  • Drain pasta and return to sauce pan. Add sauce and stir to coat thoroughly. Spoon into pasta bowls and top each serving with a sprinkle of cheese.

Notes

*increase amounts if you want more sauce, and adjust quantities to make sauce thinner or thicker
