Take-out Tuesday, Super Greens Pasta with Parmesan Pumpkin Alfredo

Thank you for all the prayers for our area, we were very lucky this time and continue to pray for everyone whose lives have been impacted
Still spinning with all these hurricanes, I haven’t been in the mood to cook…
I threw this together in minutes the other night, we needed something comforting to calm our nerves
Super Greens Pasta provided all the good stuff
And pumpkin, Parmesan and cream provided plenty of comfort
This is ready in 10-15 minutes!
Add cooked chicken, ham, bacon, turkey or sausage if desired

Super Greens Pasta with Parmesan Pumpkin Alfredo
Ingredients
Pasta
- 4-6 oz Ronzoni Super Greens Thin Spaghetti or any pasta of choice
Pumpkin Alfredo
- 1/3 cup chicken stock
- 1/4 cup cream or half and half cream
- 1/2 cup canned pumpkin [not pumpkin pie filling]
- dash ground cinnamon
- dash freshly grated nutmeg
- salt and pepper
- 2-3 oz. freshly grated Parmesan or Italian blend cheese divided
Instructions
- Cook pasta in boiling salted water until al dente. Meanwhile simmer cream with pumpkin and chicken stock until hot. Season and add 1/2 of cheese. Keep hot until pasta is done.
- Drain pasta and return to sauce pan. Add sauce and stir to coat thoroughly. Spoon into pasta bowls and top each serving with a sprinkle of cheese.

I haven’t seen the Super Greens Thin Spaghetti Jenna, it would make feel a little less guilty about eating pasta 🙂 We had a lot of wind and rain overnight, I hope you’re tucked away safe and dry!
We never had a drop of rain on the coast, only some wind yesterday afternoon, but nothing very unusual. Ironically we were in one of the only places not impacted. Birmingham got a ton of rain, schools closed yesterday and today. Sunny and 80 today, back to normal, I only wish it was normal for so so many others. Jose Jose, go away!

Jenna, we all have needed comfort food over this long path of Irma! Pasts is always welcome at my house. The addition of pumpkin makes it perfect for cooler days. It never got out of the 50’s yesterday!
I heard that it was freezing! How crazy! Hope you fared well, and things will be getting back to normal today~we never even had rain here!
This sounds really delicious and hearty. I’ve never cooked with pumpkin in a main dish but can imagine that it gives the good rich taste like squash would. Mmmm.

I want to try the super greens pasta. I cooked spaghetti with marinara sauce last night and didn’t eat any of it because of the glutens in the pasta and the lectins in the sauce. I’ve been very sensitive to those things lately….either that or it’s my nerves, with Trip’s family in Houston and my cousins in Jacksonville and Miami.
So thankful Alabama was spared!

Glad you had no impact. My cousins in Jacksonville came to my house to get away from the storm. We had a great visit but I haven’t been on line at all for five days. Trying to catch up. One of them had a tree on their house. No damage for the other one.
