Taco Tuesday Dip

Ingredients
  

  • 1 cup cooked ground beef or chicken seasoned for tacos
  • 1 cup corn kernels
  • 1 sweet onion chopped
  • 1/2 sweet pepper chopped
  • 1/2 small can refried beans
  • 3 oz grated cheddar or pepper jack cheese
  • olive oil
  • salt and pepper
  • mini peppers and/or scoop chips

Instructions
 

  • Sauté onion, peppers and corn in a little olive oil until soft. Season with salt and pepper.
  • Combine vegetables with meat or chicken and stir in beans.
  • Place in a small greased baking dish and cover with cheese.
  • Bake at 350 for 30 minutes or until heated through and cheese has melted. Serves 4-8
