Here’s a colorful recipe to add to your healthy collection~
The other day my son fixed roasted broccoli with sweet peppers
I thought this was an unusual combo, but hey, you never know~
This is the secret ingredient that brings everything together
Put the broccoli on a parchment paper lined baking sheet, drizzle with olive oil, salt and pepper and balsamic vinegar. Roast at 400 for 20-25 minutes until vegetables are soft and broccoli is starting to char on the edges
A rainbow of flavor, and very little fat and calories
Balsamic Sweet Pepper Broccoli
Ingredients
- fresh broccoli florets
- mini sweet pepper rings [or colored sweet pepper strips]
- olive oil
- good balsamic vinegar
- salt and pepper to taste
Instructions
- Line baking sheet with parchment paper.
- Spread broccoli florets evenly on paper and top with a layer of peppers. Drizzle olive oil over all and season. Toss to coat.
- Drizzle with balsamic vinegar.
- Roast at 400 degrees for 20-25 minutes or until vegetables are soft and cooked through. Serve immediately.
