This is the secret ingredient that brings everything together

balsamic vinegar

Put the broccoli on a parchment paper lined baking sheet, drizzle with olive oil, salt and pepper and balsamic vinegar.  Roast at 400 for 20-25 minutes until vegetables are soft and broccoli is starting to char on the edges

Line baking sheet with parchment paper.  Spread broccoli flowerettes evenly on paper and top with a layer of peppers.  Drizzle olive oil over all and season.  Toss to coat.  Drizzle with balsamic vinegar.  Roast at 400 degrees for 20-25 minutes or until vegetables are soft and cooked through.  Serve immediately.

Look for these at your market, mini sweet peppers already cut into rings  👏

Jenna, I’ll have to look for those pepper rings, I’ve never seen them. We love our veggies roasted in the oven and the balsamic is flavor booster 🙂

Sounds like your son is an apple that didn’t fall far from the tree!
He came up with a delicious, pretty, and healthy, and easy side dish. I LOVE balsamic vinegar, so this will be on my menu one day soon, maybe this weekend.
Tell him he needs to start a food blog, like his mom!
    Thanks for sharing.
