We just grill it with a little olive oil, salt & pepper and maybe some blackened seasoning or lemon
HHjr whipped up a tomato, onion and yellow pepper salsa for a festive touch

Which is why I don’t post a lot of fish recipes…
BUT!
I LOVE shrimp 😍
Check out this easy peasy recipe for grilled shrimp adapted from Closet Cooking
Make a quick basting sauce with coconut cream, pineapple tidbits and sweet chili sauce
Skewer peeled and deveined shrimp and season with salt and pepper
Grill shrimp over medium hot coals 2-3 minutes per side, basting with sauce during the last few minutes
You could also broil the shrimp or saute them in a skillet, adding the sauce near the end to coat. Be careful not to overcook shrimp or it will become rubbery
It’s sweet, tangy, light and bright 🍤 perfect for summer dining!
Sweet Chili Pineapple Grilled Shrimp
Ingredients
- 1 pound fresh medium shrimp 26/30 count, peeled and deveined
- 1/2 cup Asian sweet chili sauce
- 1/4 cup pineapple tidbits
- 1/4 cup cream of coconut*
- salt & pepper
Instructions
- Thread shrimp onto skewers and season with salt and pepper.
- Combine chili sauce with pineapple and cream of coconut and mix well.
- Grill shrimp over medium hot coals, 2-3 minutes per side and baste with sauce during the final 2 minutes. Baste liberally once more before serving.
- Shrimp can also be broiled or sauteed, add the sauce near the end of cooking time.
